Low Sodium and Gluten-Free Instant Culinary Cream Base

Mix: 100 g 3.5 kg 150 g 3.5 kg
Water: 750 mL 26 L 750 mL 15 L
Water: 250 mL 9 L 250 mL 8 L

TO PREPARE 1 L: Add mix to largest quantity of cold or hot water (>60°C/140°F), stirring vigorously with a whisk. Add the remaining cold or hot water (>60°C/140°F) and stir. Heat and hold above 65°C (150°F). Stir before serving. TO PREPARE A LARGE QUANTITY: Pour mix in the steam pot. Add the largest quantity of cold or boiling water all at once. Blend thoroughly using a Bermixer type blender until smooth. Gradually add the remaining cold water, stirring with the blender until smooth. Heat and then hold above 65°C (150°F), stirring occasionally.
