Brown Gravy Base

A fine, slightly cohesive, dark brown powder. Prepares an opaque, medium thick, brown sauce. Its mild beef flavour is enhanced with spices.

Flour: 60 g 13 kg
Base: 25 g 5.5 kg
Boiling Water: 1 L 220 L

Melt fat and add flour, stirring with a whisk until smooth. Combine base with boiling water and mix well. Add to fat-flour mixture, stirring. Bring to boil and allow to simmer 3 minutes, stirring occasionally.
