A fine, cohesive, brown powder. Prepares an opaque, thin, brown sauce. Its rich beef flavour is balanced with wine and vegetable notes.

Make a paste with mix and cold water. Add paste to boiling water, stirring constantly with a whisk. Bring back to boil. Reduce heat and allow to simmer 3 minutes, stirring occasionally.
