Ingredients
500 mL Inspiration Hollandaise Sauce
150 g Butter
200 g Chicken Breasts, skin removed
250 g Green Onions, chopped
50 mL White Wine or Lemon Juice
100 mL 15% Country Style Cream
200 g Snow Crab Meat
15 mL Dill Weed, chopped
5 mL Thyme
To taste Salt & Pepper
Preparation

Prepare the Inspiration Hollandaise Sauce according to package directions. Set aside. Using a large sauté pan, melt butter and sear the chicken breasts. Place in oven at 375°F for 12-15 minutes (depending on the thickness of the chicken breasts). Remove pan from oven, remove breasts, and reserve. In the same pan, sweat the green onions then deglaze with the white wine or lemon juice, reduce by half. Add the cream, bring to boil for a minute then add the Hollandaise, dill, thyme, salt and pepper and simmer for 3-4 minutes. Place the chicken on a baking sheet and sprinkle the crab meat evenly over each breast then coat with the sauce. Broil until golden brown. Serve with steamed and sticky hot Sushi style rice.
