Chicken of the Sea with a Florentine Hollandaise Sauce

Chicken Breasts*, grilled 60-70% |

Inspiration Condiment Mix for Meat or if substituting for fish, use Inspiration Condiment Mix for Fish, Salads and Vegetables |

Frozen Spinach, thawed & drained |

Crab Meat or imitation |

Parmesan Cheese, finely grated |

Olive Oil (or good quality canola oil) |

*Note: Can be substituted with salmon, rockfish, cod or sole. |
Preparation
Prepare the Luda H Low Sodium and Gluten Free Instant Hollandaise Sauce according to package directions. Keep warm. Brush the chicken or fish with the olive oil, then season with the appropriate condiment. Grill on a hot charcoal or flat top grill at high heat until it is about 60-70% cooked. Place on a baking sheet pan in uniform rows and reserve until just before service. In a large sauté pan, melt the butter at medium heat until it sizzles, then sweat the garlic followed by the drained spinach. When ready to serve, top the spinach mixture evenly on top of your grilled chicken or fish. Evenly top with the crab meat, then the hollandaise and sprinkle with the parmesan cheese. Bake in a convection oven at 400°F for 15 minutes or until done depending on the thickness of the breasts or fish.
