Chilled Celery & Cilantro Soup with Fennel

Ingredients
140 g Butter, unsalted
16 Celery Stalks, chopped
2 Onions, small, chopped
250 g Fennel, thinly sliced
4 Garlic Cloves, chopped
5 mL Ginger, fresh, peeled, minced
1.8 L Inspiration Concentrated Chicken Stock
120 mL White Wine, dry
1 bunch Cilantro, stems removed
To taste Luda Seasoned Salt
10 slices Tomato, very thinly sliced
1 Red Pepper, thinly sliced, soaked in ice water
Preparation

Heat butter and sauté the celery, onion, fennel, garlic and ginger until tender. Add Inspiration Concentrated Chicken Stock prepared according to package directions and white wine. Bring to boil. Remove from heat and add cilantro. Working in batches, purée soup in blender until smooth. Season to taste and chill. Serve in soup bowls and garnish with tomato slice and red pepper strip.
