Chilled Celery & Cilantro Soup with Fennel
"Original" Chicken Stock Paste
Ingredients

Celery Stalks, chopped |

Onions, small, chopped |

Fennel, thinly sliced |

Garlic Cloves, chopped |

Ginger, fresh, peeled, minced |
| 1.8 L |
Inspiration Concentrated Chicken Stock |
| 120 mL |
White Wine, dry |
| 1 bunch |
Cilantro, stems removed |
| To taste |
Luda Seasoned Salt |
| 10 slices |
Tomato, very thinly sliced |
| 1 |
Red Pepper, thinly sliced, soaked in ice water |
Preparation
Heat butter and sauté the celery, onion, fennel, garlic and ginger until tender. Add Inspiration Concentrated Chicken Stock prepared according to package directions and white wine. Bring to boil. Remove from heat and add cilantro. Working in batches, purée soup in blender until smooth. Season to taste and chill. Serve in soup bowls and garnish with tomato slice and red pepper strip.
