Ingredients
3 L Luda H Sodium Reduced, Gluten Free, Instant Fish Stock
3 L Luda H Low Sodium, Gluten Free, Instant White Sauce
150 g Butter or a good quality margarine
1 Spanish Onion, finely diced
50 mL Garlic Puree, roasted
1.3 kg Potatoes, diced 1/2”
2 Bell Peppers (1 yellow and 1 red) diced 1/4”
45 mL Inspiration Condiment Mix for Fish, Salads and Vegetables
300 g Canned Clams (do not drain)
200 mL 2% Milk
40 mL Parsley, chopped
200 g Mussel Meat, freshly cooked
300 g Crab Imitation, diced in 1/2” chunks
200 g Salad Shrimps (100/150 size)
Preparation

Prepare the Luda H Fish Fumet according to package directions. Prepare the Luda H White Sauce according to package directions, but substitute the water for the prepared Luda H Fish Fumet. Keep warm. In a large pot, melt the butter or margarine over a medium flame and sweat the onions, garlic, potatoes and bell peppers for 4-5 minutes. Add the rest of the ingredients except for the mussels, crab imitation and shrimps. Bring to a quick boil (1-2 minutes) and then lower the heat so that the chowder is just simmering. When potatoes are almost tender, add the rest of the seafood and simmer for 3-4 minutes. Can be served as a balanced main course or as a hearty starter item.
