Ingredients
3 L Luda H Sodium Reduced, Gluten Free, Instant Beef Soup Base
75 mL Inspiration Condiment Mix for Meat
1.4 kg Beef Cubes (3/4”), from the chuck would be my first choice or top butt
175 mL Sweet Hungarian Paprika or smoked paprika if not using the bacon
300 g Double Smoked Bacon, julienned
160 mL Canola Oil or, if using the bacon cut it back by half (80 mL)
3 Bell Peppers or sweet Hungarian banana peppers (you choose the colour), diced 1/2”
1.5 Large Spanish Onion, finely diced
8 Garlic Cloves, minced
750 mL Tomatoes, diced (fresh diced, no skin or seeds or a good quality canned diced tomatoes)
To taste Ground Black Pepper
2.8 kg Idaho or Russet Potatoes, peeled and diced 3/4”
Optional:
20 mL Caraway Seeds (not my taste choice, but my dad insists it should be there! - Chef Otto)
Preparation

Prepare the Luda H Beef Soup Base according to package directions. Keep warm. In a large bowl rub the Inspiration Condiment Mix for Meat on the meat along with half of the paprika. Cook the bacon over a medium flame in a large Rondeau pot until the bacon is crispy. Remove the bacon and reserve. Increase the heat to a high flame and brown the meat in the canola oil, then add the peppers, onions and garlic and sweat at a reduced medium flame for 4-5 minutes. Add the rest of the ingredients except for the potatoes and simmer slowly until the beef is almost tender, about 80% cooked. Add the potatoes and cooked bacon (if desired the caraway seeds also). Simmer over a low-medium flame until the potatoes are cooked.
