Seafood Casserole in a Puff Pastry
Sodium Reduced and Gluten Free Instant Seafood Sauce Mix
Ingredients

Luda H Sodium Reduced, Gluten Free, Instant Seafood Sauce |
| 100 mL |
Butter or a good quality margarine |
| 1 medium |
Onion, finely diced |
| 4 |
Cloves of Garlic, finely minced |
| 300 g |
Mussels, cooked (remove shells and reserve the cooking juices) |
| 150 g |
Sharp Cheddar or Monterey Jack Cheese, shredded |
| 15 mL |
Dry Dill, or 25 mL fresh |
| 800 g |
Seafood and/or Fish of your choice, cooked |

Puff Pastry Triangle, cut 3” by 3”, cooked |
Preparation
Prepare the Luda H Seafood Sauce according to package directions. Keep warm. In a large sauce pot, heat the butter or margarine over medium flame until almost brown. Add the onions and garlic and sweat for 3-4 minutes. Deglaze with the mussel juices, allow to reduce by half. Add the sauce, cheese and dill. Bring to a soft boil for 2-3 minutes then add the mussels and the cooked fish and seafood. Simmer for 4 minutes, being careful not to break up the fish and seafood. Serve in the bottom half of the puff pastry triangle and top with the other half.
