Ingredients
1.5 L Luda H Sodium Reduced, Gluten Free, Instant Seafood Sauce
100 mL Butter or a good quality margarine
1 medium Onion, finely diced
4 Cloves of Garlic, finely minced
300 g Mussels, cooked (remove shells and reserve the cooking juices)
150 g Sharp Cheddar or Monterey Jack Cheese, shredded
15 mL Dry Dill, or 25 mL fresh
800 g Seafood and/or Fish of your choice, cooked
10 Puff Pastry Triangle, cut 3” by 3”, cooked
Preparation

Prepare the Luda H Seafood Sauce according to package directions. Keep warm. In a large sauce pot, heat the butter or margarine over medium flame until almost brown. Add the onions and garlic and sweat for 3-4 minutes. Deglaze with the mussel juices, allow to reduce by half. Add the sauce, cheese and dill. Bring to a soft boil for 2-3 minutes then add the mussels and the cooked fish and seafood. Simmer for 4 minutes, being careful not to break up the fish and seafood. Serve in the bottom half of the puff pastry triangle and top with the other half.
